Being home this last month has really allowed me to explore my kitchen more. I'm really trying to eat healthy while I'm home because I find that it's really easy for me to eat junk when I don't have school. With my Greece trip coming up in a few weeks, the last thing I want is to being indulging on junk food.
The reason I chose to share this meal is because of my new obsession, PB2. I'm not sure how globally known PB2 is, I got mine from the States, but basically it's powdered peanut butter. It's a really weird concept but it's honestly life changing. It has 85% less fat than normal peanut butter and has a lot more protein. Peanut butter is one of my absolute favorites but it's so high in fat that I don't get to enjoy nearly as much as I would like. This is such a great alternative and can be used in shakes, oatmeal, baking, and can even be made into normal peanut butter by simply adding water! It's really such a great invention.
The way I've been enjoying it most is using it in my oatmeal. I like to add one tablespoon of PB2, instant oatmeal, one packet of sweetner to add a little sweetness, and half of a banana. It's amazing!!! PB2 is something I'm definitely going to buy over and over again. Like I said, I'm not sure if this is available everywhere but I'll leave the amazon link!
